Did Dr. Wallach suggest that you go on a Gluten-Free Diet?
Here is the quick test Dr. Wallach would ask to determine if you are gluten intolerant:
Do you have any bowel problems (irritable bowel syndrome, diverticulitis, celiac disease, constant constipation or diarrhea, etc?)
Did you have asthma as a child?
Do you currently have lung problems including chronic bronchitis?
Do you have any skin problems like eczema, psoriasis, constant rash, rosacea, etc?
Have you had your appendix out?
If you said yes to any one or more of these then you are gluten intolerant. The Mayo Clinic estimated that one-third or more of our population is gluten intolerant.
Gluten-Free Diet: You should avoid anything that contains wheat, barley, rye or oats. IF IT HAS WHEAT, BARLEY, RYE OR OATS IN IT DON'T EAT IT! You'll have to read labels to be sure if any of these are contained. At restaurants ask to be sure that the foods you are ordering do not contain any gluten. You can eat the Good Foods below.
There are many gluten-free cookbooks on the market. You can call 800-755-4656 to order one sold by Dr. Wallach's wife, Dr. MA Lan. At that same number you can order any of Dr. Wallach's books, CDs or DVDs.
Major food stores have large quantities of gluten-free items. Ask your grocer for them. Most restaurants have gluten-free items or complete gluten-free menus. Ask for them.
Below are the recommendations from Dr. Wallach for EVERYBODY, not just those with a gluten intolerance:
BAD FOODS: These are the foods to avoid. They are killing you!!
NO Fried Food - nothing fried! You should boil, broil or bake and never more well-done than medium rare.
NO Oils—cooking or salad. Yes, this includes Olive Oil!!! NO OIL OF ANY KIND!
NO well-done beef (rare or medium-rare is ok).
NO nitrates or nitrites – Read labels. Tell your butcher NO NITRATES or NITRITES!
NO carbonated drinks within one hour before, during or 1 hour after meals.
GOOD FOODS:
Eggs—soft scrambled in butter, soft boiled, poached.
Butter.
Salt.
Dairy.
Fish.
Chicken.
Pork.
Lamb.
Beef—rare/medium rare.
Veggies.
Fruit.
Mixed, Salted Nuts—no peanuts.
Nut Butters—no extra sugar.
Rice.
Millet.
Pure Buckwheat (Isn’t wheat).
Beans.
Couscous (made from pearl millet only).
Quinoa.
Corn.
Coffee, Tea, Green Tea, Redwine.
4-8, 8oz glasses of filtered water each day. Avoid soft plastic bottles.
Here is a list of bad things that Dr. Wallach recommends that everyone eliminate from their diet.
No Fried Foods.
No Carbonated Drinks within 1 hour before or after meals.
No Burned meats. Boil, broil or bake and never more well-done than medium rare.
To cook eggs you may:
Poach- This is his number one choice because the water never reaches a temperature greater than 212 degrees.
Scramble with butter over very low heat and only until they are just setting up. If you can hear them cooking it’s too hot.
Soft Boil with the yoke still runny. Some call them "2 minute eggs".
No Oils. Yes, this means NO olive oil, NO canola oil, NO coconut oil, etc. If it has OIL in the name don’t use it. This also includes anything made from oil, like salad dressing. He recommends only salt and lemon juice as a salad dressing.
No margarine or combo spreads. No mayonnaise. Don't cook with it, don't put it on your salad, nothing made from oils. No burned fats. If you grill your food have something between the food and the fire (like foil) so the juice doesn’t drip onto the fire and deposit dangerous things on the meat.
Here some of the things that Dr. Wallach says you should do:
DO: Salt your food to taste. To properly digest your food you need stomach acid and salt helps in the creation of stomach acid.
DO: Use Butter instead of margarine. Margarine is simply oil in a solid state.
